- 9g lime jelly crystals
- 1 cup sweet sherry
- 6 tbsp white sugar
- 2 cups white vinegar
- 1 cup finely chopped fresh mint
- Lightly simmer vinegar and sugar in a saucepan until sugar dissolves. Add mint, jelly crystals and sweet sherry, simmer until mint softens and jelly crystals dissolve.
- Allow to cool and pour liquid into jars. Place in fridge. Shake bottles an hour later to combine mint as liquid starts to set and solidify into a jelly.
