Salt and Vinegar Whiting Fillets

Ingredients
- 170g Smiths salt and vinegar chips
- 700g butterflied winter whiting fillets
- 1 cup plain flour
- 2 eggs
Instructions
- Cut a large corner off the salt and vinegar chip packet. Crumble the chips in the packet using a rolling pin until finely crushed.
- Place plain flour in a plastic bag.
- Whisk eggs in a shallow dish.
- Place salt and vinegar crumbs in a plastic bag.
- Place whiting fillets in the flour two at a time, jiggle to coat the whiting. Shake off the excess flour before removing from the bag.
- Dip the floured fillets in egg until covered.
- Place fish in salt and vinegar crumbs until evenly coated.
- Repeat the process until all the fillets are coated and ready to cook.
- Deep fry fish in rice bran oil until golden.
