Spanner crab is a delicacy in Southeast Queensland. This crab is the perfect ingredient if your looking to make a special seafood treat. If you can’t get your hands on a couple of these red devils you can always use sand or mud crab as a substitute and you won’t be disappointed.
Spanner Crab and Leek Cob Loaf

Ingredients
- 4 spanner crab bodies peeled
- 1 cobb loaf
- 1 tbsp butter
- 2 cloves garlic, crushed
- 1 leek
- 250g Philadelphia cream cheese, diced
- 1 tbsp butter
- 500g thickened cream
- 500g Perfect Italiano 4 cheese mix
- Garlic chives for garnish
Instructions
- Cut the top off the cob loaf and pull out bite size pieces of bread from the loaf until the loaf is hollow making sure the shell is still intact. Break the top apart also.
- Finely chop leek, add to a pan with butter and garlic and sauté until leek is transparent.
- Add cream cheese, 4 cheese mix, thickened cream, leek into a microwave bowl and mix well.
- Heat the bowl in the microwave for 2 minutes.
- Add spanner crab to bowl and mix well.
- Place bread shell into a baking tray with the tufts off bread arranged around the shell.
- Pour the mixture into the hollowed bread shell and bake in a moderate oven for about 20-25 minutes until the mixture has melted and bread is golden.
- Remove from oven and serve hot, garnish with garlic chives and place remaining claws around cob and serve.
