Steamed Syrup Pudding

Ingredients
- 2 cups self raising flour
- 1 cup milk
- 2 eggs
- 1 cup caster sugar
- 1 tbsp butter
- ½ cup syrup
- 1 tbsp self raising flour (extra)
- ½ cup sultanas
- ½ cup freshly grated coconut
Instructions
- Grease steamer and dust with extra flour.
- Place syrup in bottom of steamer.
- Add a layer of sultanas.
- In a mixing bowl cream butter and sugar.
- Add eggs and mix.
- Add flour milk and coconut to mixture and stir until all ingredients are combined.
- Place mixture on top of sultanas.
- Cover the top of the steamer with aluminium foil and clip on the steamer lid.
- Place steamer in a boiler and add enough water so that the steamer is submerged 2cm up the side of the steamer.
- Bring water to the boil. Top up the water as the water evaporates. The pudding needs to steam in the boiling water for 1.5 hrs.
